Where have I been!? Working my tail off, that’s where. Well, more of sitting on my bum in front of a computer for 10ish hours a day, but needless to say still working hard and not getting any days off. Thai peanut veggie wrap to the rescue.
The official busy time at work is now over. Yessssss, thank goodness. Even though it’s been a little over a week since I’ve posted, I’ve missed my little Veggie Balance blogging time!
Well, I’m back and ready to have my normal routine and life back. I’m a creature of habit and when I’m thrown off my normal schedule I feel so out of whack.
When you have little time like I did lately you gravitate to easy, quick food. Unfortunately, most of the time that food is all sorts of something not good for you.
Fortunately for you, this Thai peanut veggie wrap are quick, simple, oh so delicious and good for you. Awesomesauce.
Which, speaking about sauce. This peanut sauce for these wraps is AMAZING. As you all know my addiction to peanut butter.
Now, one thing I want to clarify. I speak of soy often and the dangers of unfermented soy. There are many benefits to fermented soy though. Soy sauce is a fermented soy and is listed as one of those safe soys to consume.
So excited to be writing this post and back in the swing of things! Today is the beginning of detoxing my body. I stayed on track the best I could, I splurged a little to much by the second week and boy am I feeling it.
I am tired, lethargic, have NONSTOP cravings for sugar in any form. I’m all for working and paying the bills, there is a fine line for me though.
I’d rather work just enough to pay my bills and provide for my family but still have time to enjoy life and not feel stressed vs. working nonstop.
It’s just not worth it for me. I’d rather enjoy life and not be rich. That sounds like a hippy statement I know, maybe that was my inner hippy screaming out. 🙂
