So I was thinking I probably shouldn’t do another muffin recipe since I just posted the healthy cornbread muffins last week. Then I decided WHY NOT? Muffins rock!
Especially these Greenie Banana Muffins! If I could live off of muffins, I would. They are just so travel friendly and a easy snack.. Or as I’m guilty of a easy MEAL when you eat a couple of them…
The second favorite thing about these muffins besides that they are delicious? Well, they are the simplest things to make. Just whirl them in the blender, mix with dry ingredients and and bing bam boom you got yourself a healthy muffin! Now what gives them the greenie name?

Have I lost you?? Don’t be afraid of greens.. They are good for you. That’s what our parents told us day in and day out as kids.. Well, they weren’t lying. Spinach in the muffins are just like spinach in your smoothies..
You have no clue its in there but the benefits to eating your greens are tenfold. I always find I have so much more energy when I make myself a spinach smoothie.
Anyone else? Maybe its in my mind… I always think of Popeye when I eat spinach.
These are such moist muffins and I’m going to tell you one more reason why they are AMAZING. One muffin is 102 CALORIES!
Not only does it taste delicious, packed with spinach and potassium goodness, it’s low calories to boot! You can easily make these vegan by switching out the eggs to a flax egg (1 TBS ground flax seed + 3 TBS water).
I was completely floored when I realized these had less than 2grams of fat AND were 102 calories. They were so delicious and healthy that I almost shared them with my coworkers but then decided I wanted to be selfish this time and keep them all to myself. Guilt free muffins?
All mine? Yes please! They are delicious with a little butter or even just warmed up in the microwave for 15 seconds and eaten plain.

I want to try but kind of confused with the measurement. How many cups will 3 bananas yiels? Also if I am using frozen spinach, would 1 box (10oz) be enough? Thanks in advance!

Welcome Sasha! One banana would approximately be 1/2 cup so 3 bananas would roughly be 1 1/2 cups. Also, 8 ounces roughly equals 1 cup. Since frozen spinach generally is compact and wilted down I say that would be enough. Just because I used fresh spinach and it wasn’t wilted down I’d advise to perhaps use half the frozen box of spinach. Hope this helps! 🙂

Can you use any other flour instead of regular four? Like maybe coconut or almond?
