Vegan Friendly Chocolate Chip Bites that are low calorie and low sugar to boot!
Behold! I give you one of the most amazing ideas I’ve had in a while. Grain-free chocolate chip cookie bites! To me there is no reason to sacrifice taste when trying to eat better.
These are a perfect example of my motto, you wouldn’t have a clue these are made of BEANS. Yep, that’s right. In this journey of clean eating I’ve really grown as a person.
My food tastes have grown as well. I now enjoy fruits and vegetables that I wouldn’t even considered eating 4 years ago.
Eating healthier has altered my taste buds. I taste food at its most basic form and truly enjoy all the flavors I never used to notice, it’s amazing. These babies stemmed off the idea of my black bean brownies where you use black beans instead of flour.
With that concept the chocolate chips cookie bites were born! They are so decadent, amazingly moist and will leave you weak in the knees.
They are also grain-free, vegan friendly and low sugar to boot! You’re going to want to join in this party of deliciousness. Let’s go!
These babies are going to be lucky to make it two full days in my house. Luckily, I went for a 3 mile run today and they are only 52 calories each! Score! After the long distance training I’ve done over the last couple months a 3 mile run on the weekend was a cinch.
It still baffles me that a year ago I was lucky to be able to run 2 minutes! My next challenge is my pace. Currently I’m working on my pace and I’m beginning to find that running faster is actually easier on my muscles but tougher on my lungs and heart. My personal record for a 5k was 37 minutes.
Today I ran it in 34 minutes! Again, some might see that as slow. I don’t care, I see it as progress! I do what my body can do and each day I push myself a little more because it feels so good to see myself improve. I think just for that, I’ll rewarding myself and eat the remaining bites.
I mean seriously at 52 calories and less than 3 grams of sugar each, I say it’s OK to indulge a little. These are vegan friendly as I used Enjoy Life Mini Chips which are a great alternative to normal chocolate chips and personally can’t taste a difference.
I made these in a mini cupcake pan as I am a total sucker for portion control. Dividing desserts up into smaller portions allow me to consciously realize how much I’ve had, whereas in a pan I’ll keep taking a ‘sliver’ and next thing I know the entire pan is gone.
I can definitely see it being able to bake in a 8×8 or even a normal cupcake pan. I just unfortunately don’t know what the cook time would be. Test it with a toothpick and if it comes out clean then your good to go!
I left the brown sugar low with 1/8 cup just because as I said earlier my taste buds have seriously changed and I don’t need as much sweetness as I did in the past. Plus the dollop of chocolate on top of these babies adds to the sweetness.
If you are at the beginning stages of trying to eat healthier than I’d advise to go to 1/3 cup. Play with it and slowly lower your sugar. You’ll be amazed when you don’t notice a huge difference. To put it in perspective, 2 Tablespoons of sugar is 96 calories and another 24 grams of sugar. 24 grams!
That my friends is a lot when taken into account the average American should consume 40 grams a DAY. Yikes. If you haven’t noticed by now, I also never advise to sweeten with artificial sweeteners.
I have a couple bones to pick with them. {Soap Box Moment} First off they are artificial, enough said. To me, anything that has ‘no calories’ is processed garbage and shouldn’t be put in our bodies.
Our bodies are fragile ecosystems in a way, consuming foreign foods that are processed and chemically altered throws our fragile system off. When you put sweetness into your body your body craves more.
It’s just the way our bodies work. The less sugar you consume the less you crave it, it’s that simple. Sugar is our worst enemy, it’s in essence a drug. Our bodies need it to function but as a society we consume WAY to much of it. {End Soap Box Moment}
