Healthy Cucumber Salad offers a fresh, crisp, clean and flavorful dinner or lunch choice. Taste summer with every single bite. (Gluten-free, Vegetarian, Vegan)
Fresh, crisp, clean and healthy Cucumber Salad. Ahh I can feel summer at every single bite. Oh not to mention this is the easiest salad to put together either. Earlier this week I posted the Vegetarian Chili with Banana Peppers. It was my tribute and a way of closing out and saying adios to winter! ADIOS! (Lets be honest, I’ll still make a couple batches of chili when it’s 85 degrees outside.)
Say hello to the fresh clean cucumber salad you can whip up in a flash. Summer I’ve been waiting for you. Hopefully me now being part-time it means I can actually enjoy the summer! Go for walks (hopefully running eventually) during the day and enjoy the sun. Sit on the deck and work on my laptop. Ooo that gave me an idea, must re-do our deck ASAP and purchase a deck set that I’ve been wanting since day one.
That might be exactly what Roland is talking about. I come up with a new house project / expensive idea every day. Can’t help it, I’m a women. We like to make things pretty and feel like home!
Our current project is the deck actually. Man oh man it is a can of worms opened! We have 4×4 posts that are maybe 2 feet tall and are really 2×4’s wrapped in more wood. Nothing about this deck was done to code. Needless to say, it’s a can of worms.
Why is it that people can’t do things right? Our house isn’t that old, built-in 1996. We’ve found so many odd things about our house. Actually, here is a deck throwback. Circa 2011.
Yes, this is a WTF moment. We have a massive deck sort of pictured to the right, then this monster of a lower deck. WTF. We ripped that lower deck down that year, it was too hideous to stand looking at for more than a year.
So with all non-coded work we are fixing it and doing it right. Actually we are tearing those current stairs down and building them closer to the house. That open space? Becoming my herb garden. I’m stashing it with every herb you could possibly think of. Too excited.
Try this 15 minute Greek Cucumber Salad by Healthy Seasonal too. Cucumber salad OBSESSED.
On another note, I’ve been trying to run now for 3 months. Physical therapist has been telling me no this entire time. She finally told me to just go for it, it might break some things up. I’ve honestly stopped writing over at my other site documenting my surgery because I’m so fed up with this entire process that just writing about it makes it worse.
I finally said F*** it, I’m running. Running is my outlet, it’s my time with my own thoughts. Yesterday was the best 1.5 mile run ever, such an amazing feeling I went for another run after work! Probably should clarify, amazing emotionally, it was nothing close to amazing feeling wise. I had to stop for a break lots of times. Goodness, how can you become so out of shape so quick?
I mean, I haven’t been sitting on my bum these three months. I’ve been biking, walking and lots of squats and pistol squats. My cardiovascular strength would tell you otherwise.
I’m hoping that I can start doing yoga next too. Don’t ask me whats wrong with me, I can only say by the grace of God do I have this drive to just push through life. I use to not be that way at all. A healthy diet and taking care of yourself doesn’t just take care of your physical body, it takes care of you mentally too. So even with this pain and nerve crap I can’t let it control my mood, life is too short for that.
It’s 3 1/2 months post-op.. I have only 60% range of motion in each direction. Not to mention nerve pain radiating down my arm into my fingers. I am worse off now then when I was before the surgery. Absolutely a horrible feeling. After I kept telling them over and over again the pain I was experiencing my physical therapist finally listened, did some tests and is pretty positive I have some nerves compressed or damaged. Also, possible a buttload of scar tissue that is built-in there. All I know, I’m done.
Nothing that can be done other than do my best my friends. Done worrying about it, done stressing over this is my arm forever. Just done.
There are reasons why I’ve been posting more desserts like the Gluten Free Peanut Butter Pie, Cookie Dough Truffles and Bacon Wrapped Apple Slices. Well the apple bacon isn’t dessert but man it’s up there in the comfort food realm.
I’m coping people, but with healthier more natural options at least. 🙂

This looks so refreshing. I really can’t wait to make this recipe. The next time I head to the grocery store I’m definitely gonna snag all of the ingredients to make this! Thanks so much for sharing. I love that you added dill! Dill really does goes with cucumbers so well!
