Mint Chocolate Chip Truffles Mint Chocolate Chip Truffles, Breakfast, snack, dessert who knows what to call it, they are freaking good. (Gluten-free, Low-Sugar, Vegan, Vegetarian)
Healthy chocolate chip truffles… they are heaven’s way of saying it loves us. It’s also the perfect way to tell your stomach you love it too.
These are so unbelievable good and not bad for you it’s dangerously seems impossible. But really, the fact that I can eat these before a workout seems like I’m being outrageously bad. In reality, I’m just eating protein packed goodness with just enough sugar to burn through it.
When I made the chocolate chip cookie dough bites I knew I hit the goldmine. It is seriously one of the easiest recipes to whip up in a flash. I always have every single one of these ingredients in my house as well. #score
A spin-off of the chocolate cookie dough truffles I added one of my favorite flavors to it, MINT.
Ahh mint, it’s one of those flavors that adding with a little chocolate makes my taste buds complete. I have a steady 72% mint dark chocolate that is oh so delicious. But I have to be careful and ration it out. I generally have my 86% dark chocolate, I love 86% because of it’s almost zero sugar but all packed with that creamy, chocolately, I want to bathe in it flavor. Rationing out the 86% dark chocolate is not a concept I understand.
Dude, how is it that no one has come up with bathing in chocolate? We bathe in mud and beer but not chocolate? Mm… maybe I’ll become a millionaire with this idea. (sounds good right?) lol
Haven’t heard about bathing in beer before? I can stay I’ve experienced this first hand myself. Well, not so much bathing in it as in a tub full of beer. (Which is what they do) But, back in the day I went on one of my favorite trips ever with a friends family somewhere in Canada. Circa 2005 my friends I was in the absolute boonies.
That right, right there is 15 year old Lindsay on the left. Which you can’t totally tell by this old quality pixel-y photo but there are some epic farmer tan lines from playing softball that year. (Bet now you see it)
This trip was honestly a trip I’ll never forget. It’s what makes me realize how much I love being out in the middle of nowhere and confirms my goals to live off the land down the road. We flew onto this island in a water plane, no running water, no electricity, no cell-phone service (then at least). We were just enveloped in nature, it how we should live forever.
I promise there is a point to this story while I go back in time and reminiscence. Back to this bathing with beer. (ADD?… perhaps).
There was no running water in this oasis so we bathed in the lake. Not sure who or what told us to wash our hair with beer but we did and it actually did a better job then just water. I almost wonder if a dark thick rich beer would be even better.
Wouldn’t that be something if that was a normal thing. No need for shampoo my friends, we just need beer.
So enough of alcohol, we need to talk about these desserts, breakfast, snack dude I’m not really sure what to qualify these as, they are just freaking good. Simple, all-natural ingredients and you can’t go wrong.
