Let’s be honest here after this weekend most of us probably need some greens in our lives. Look no further this healthy spinach strawberry salad is that green my friends.

We had a fabulous weekend up north with family. Didn’t eat too horrible but definitely not our normal kind of meals. We were halfway home before R mentioned he needed a big ole’ salad in his life. Was proud he even said that because not going to lie I was feeling the exact same way. I had plans already to do just that.
Isn’t she just beautiful? (Seriously is almost too beautiful to eat. Almost)
Don’t worry though, I demolished this salad. Don’t judge but when I made this salad for this post, that entire bowl you see? I ate it all. I was really full but it was so good.
I wish I could have whipped this salad up again when we got home but I was already feeling the wrath of a flare up. Going to the store to buy fresh ingredients felt like I was being told to go run a marathon. It wasn’t happening.
We have two go-to places when eating out. Chipotles and Paneras. They aren’t perfect but are a whole lot better than other options.
We stopped at Paneras on the way home, grabbed myself a chicken cobb salad and homeward bound we went. After I demolished this massive salad I slept for 5 hours. Woke up for 2 hours and went back to sleep for another 13 hours.
Dealing with a stupid flare up I’m pumping myself full of dark leafy greens and all-natural goodness. It is the way to go my friends. Oh and dragging my butt downstairs to workout. I always feel a little better when I work out, especially during a flare up.
This bowl photographed actually has a lot of sentimental value to me. It was a gift from my momma on my wedding day.
Growing up my mother had a big green salad bowl that we would make salads in almost every night for our family. It became a staple at our dinner table. My mother thought it was only fitting that I had a large green salad bowl myself as I began my own family. Honestly, it was the perfect gift. I think of her every time I bring it out. <3
There is another reason it means so much to me. My wedding day was less than a month after I had my scary sepsis infection and was in the hospital. Almost right after the wedding is when I started making my lifestyle changes.
This bowl represents new fresh beginnings to me. Photographing it for the first time with a lively fresh salad in it seemed just serendipitously perfect.
So whether you want to be greedy and eat this entire salad yourself (I highly recommend) or make this for your family while your all sitting around the dinner table. Either way it is worth it. Especially if you have a giant green salad bowl to make it in. 🙂
