Two desserts in two weeks. Oh boy its like Christmas morning with these low sugar truffles. Last weeks recipe was the healthy gluten-free chocolate chip cookies and this week is strawberry cream cheese truffles that only needs 4-ingredients. I just keep making desserts, sue me.
That’s right, you can sue me or you can join me.
I strongly encourage you to join me. There are many times I don’t recommend following the crowd, this time is not one of them times. Join me, we can devour these strawberry cream truffles together. Make a batch, bring it over and there won’t be any left before you leave. You could also be selfish and not share them either. I’ll understand.
These truffles being low-sugar means I can indulge just a littttle more than normal. That is always a win in my eyes.
Especially when I’m on the dessert kick that I am on currently. Again, don’t judge, join me.
Believe me, you’re going to want to join me. I already have an idea for a new cookie recipe and if it turns out right I have a sneaky suspicion it’ll become the worlds best cookie. Maybe that’s slightly dramatic about a cookie but I’m hoping they turn out fabulous. I need some delicious cookies to eat on our road-trip to Minnesota soon!
Dessert that is simple, easy to make and only 4-ingredients total is a win. Now, to add that it’s gluten-free and low-sugar makes it such a win that I just want to make more. But first, let me eat this truffle.
Maybe you’ll understand why I keep making desserts too. I need to treat myself for all this hard work done.
Another reason I love making desserts are they are almost always so quick to make. Quick to make and quick to demolish every single bite, that is how I roll.
I can’t take full responsibility for eating these in less than 24 hours, R helped out too.
We’ve both been running quite a bit to get ready for the half marathon in 20 days. Which I’m still regretting about signing up for. Maybe if I had a couple of months to mentally prepare for it I’d feel a little different but we decided we were doing it barely a month before it.
The more running I do, the more I crave the sugary treats to compensate for the calories lost. It’s a double edge sword. I look forward to the race to be over with, next time I’m going to prepare more ahead of it. It also makes me slightly nervous since I haven’t ran for the first 5 months of the year because of the shoulder surgery. Keep your fingers crossed I at least get over that finish line.
These next couple months are a whirlwind and a lot is happening! Join me with my healthy desserts obsessions, chocolate loving, cookie baking, chocolate dipping kind of cravings. Oh and muffins, muffins are definitely in my future as well.
